Mediterranean Potato Salad

Serves 4
Create a heart-healthy dressing for this classic salad by combining hummus and yogurt. Mix up a bowlful and take it to a tailgating feast.
Ingredients:
- 4 medium red potatoes
- 1/4 cup pistachio nuts
- 1/4 cup minced parsley
- 1/4 cup diced onion
- 1 large garlic clove, minced
- 1 tablespoon lemon juice
- Salt and freshly ground pepper
- 1/4 cup hummus, any flavor
- 1/4 cup plain Greek yogurt
Instructions
- Cut the potatoes into half-inch pieces. Cook them in boiling, salted water for about 10 minutes, or until they can easily be pierced with a knife. Drain and rinse under cold water. Set aside.
- Toast the pistachios in a dry skillet over medium heat until lightly browned, about 5 minutes, or until they smell fragrant. In a large bowl combine the cooked potatoes, pistachios, parsley, and onion.
- In a second bowl combine the garlic, lemon juice, hummus, and yogurt and stir to make a smooth dressing. Add the dressing to the potatoes and stir gently to coat evenly.
