pineapple walnut salad

Pineapple-onion salad with citrus dressing
4 cups fresh baby spinach
2 cups torn leaf lettuce
1-1/2 cups peeled fresh pineapple wedges
1/2 cup thinly sliced red onion
1/2 cup walnut pieces, toasted, if desired
Citrus Vinaigrette
1 tablespoon walnut or canola oil
1 tablespoon vinegar
1 tablespoon frozen orange juice concentrate
2 tablespoons honey or sugar1. In a large bowl, combine spinach, lettuce, pineapple and onion. Toss to mix.
